Zucchini Bread

Banana bread is all the rage but in the warmer months when this fruit makes a comeback - you've got to make some zucchini bread! Try this awesomely scrumptious and moist recipe inspired by warm weather and good eats. One of the best make ahead treats for any gathering.

1 stick butter
2 eggs, beaten
1/2 cu buttermilk
10 oz zucchini, shredded
1 cu flour
3/4 cu cornmeal
1/2 cu whole wheat flour
1/2 cu brown sugar
1 tsp baking powder
1 tsp salt
1/2 tsp baking soda
1/2 tsp cinnamon, clove, pepper or another yummy spice

Whisk melted butter, eggs and buttermilk together. Add zucchini, powder, soda, salt and spices. Combine and mix all the flours and cornmeal separately then add to the wet ingredients, mix thoroughly and place in a long, buttered, baking pan.

Cook at 350 F for 40 minutes or until a toothpick almost comes out clean. If you wait until it's clean it will be too try.

Let cool and store wrapped in plastic wrap to keep in moisture.
